CAMILLA'S DAIRY-FREE SOFT CHEESE

This is an alternative to Dairy cheese and if you don't want to use cow milk. Freeze-dried Spices are perfect for this dairy-free soft cheese. add in more water and you have a really nice dip-sauce as well. Really easy to do and goes well with some gluten-free crackers. 

This is the Ingredients you need:
2 dl soaked cashews
1 tablespoon squeezed lemon
1 tablespoon olive oil
2 tbsp water
Herb salt
white pepper

Flavoring:

2 teaspoons of freeze dried spices  mixed with 1/2 dl of water. Blend in a cup and let it expand for some minutes. 


HOW TO DO IT:

Soak the cashews for 2 hours. Put them in a blender and run them to a smooth batter


Add oil, water, lemon, salt and white pepper
Process for at least 5 minutes so that the batter does not become curdled. Mix in more oil and water if you want your soft cheese to be smoother


Season with freeze-dried spices of choice that you blended.
To make the dip smooth with Freeze-dried spices, you have to mix in more water and oil so the spice has a chance to expand before you blend them in. 

 

FLAVORING:

Freeze-dried garlic powder & freeze-dried parsley and freeze-dried basil
Spicy mix + My personal favorite RANCH
