It is not easy to find crackers without corn flour or gluten-free. If I find some, they are the way to expensive. I created my own recipe for crackers that are really easy and cheap to bake. You can blend in any Freeze dried spices you want of course but in this recipe it's Cinnamon.
For 20 pieces:
Ingredients:
3 dl sesame seeds, 1 dl sunflower seeds, 1 tbsp Ceylon cinnamon.
1 tablespoon Physillium husk
1 dl water
2 eggs + 1 tsp salt
Do this:
Mix the dry ingredients, whisk the eggs and the water, and mix everything. Spread out on a silicone mat or oiled baking paper.
Bake for 30 min in 150 degrees, take out the plate and press a knife and create marks so it's easy to break when it's done.
Turn around the cracker plate and continue to bake it for another 20 minutes or until it's dry and crispy. Take it out and put on the grated cheese and bake for another 10 minute on 175 degrees C. Let it rest and dry in the oven on 50 degrees C
TIPS: These crackers are amazing to bake without Cinnamon and exchange it for the freeze-dried Spicy blend and some grated Chevrette or Manchego cheese.
